Starting with a bang - Instant Pot Chili

    This Vegetarian Lentil Chili recipe yields a nice batch for several meals.  A wonderful make-ahead!  It's healthful, plant-based, and satisfying.  I first tried the recipe as written, at left.  Later, I experimented with substitutions, and played with the original flavors to find what tasted best to me.  And what was tolerable to my partner!   This recipe is for use with an "InstaPot" pressure cooker.   Once the ingredients are prepared, it only takes 10 MINUTES to cook! It takes ME 30 minutes to prep and cook it.   In this recipe, the ingredients can be added in any order.   So it's a great one for a day when "brain fatigue" kicks in! Adding the broth and spices.  I suggest using less garlic and less chili flakes to start with!  Especially if you won't be the only one eating it! The finished product.   Enjoy!
